Spicy Chicken and Vegetables

I can’t remember anything about this recipe. Must try it again to see if it is good. 

Spicy Chicken and Vegetables

Servings 6

Ingredients
  

  • 1 tablespoon oil
  • 1 kg chicken thigh fillets quartered
  • 1 tablespoon oil
  • 1 leek sliced
  • 2 cloves garlic
  • 2 teaspoons curry powder
  • 2 tablespoons grated fresh ginger
  • 2 tablespoons grated lemon rind
  • 1 kg bag frozen vegetables
  • 300 ml cream
  • 1/4 cup fresh parsley
  • Red capsicum strips

Instructions
 

  • Heat 1 tablespoon of oil
  • Add chicken in batches,
  • Cook, stirring, until chicken lightly browned
  • Remove chicken from pan
  • Heat another tablespoon of oil
  • Add leek and garlic
  • Cook, stirring until the leek is soft
  • Stir curry powder, ginger, and lemon rind into the leek mixture
  • Cook, stirring for 1 min
  • Add frozen vegetables and cream, with chicken, to pan
  • Simmer, uncovered, for 10 min (veges and chicken are tender and liquid has thickened slightly)
  • Stir parsley in
  • Garnish with red pepper
