Spicy Chicken and Vegetables

Ingredients
  

  • 1 tablespoon oil
  • 1 kg chicken thigh fillets quartered
  • 1 tablespoon oil
  • 1 leek sliced
  • 2 cloves garlic
  • 2 teaspoons curry powder
  • 2 tablespoons grated fresh ginger
  • 2 tablespoons grated lemon rind
  • 1 kg bag frozen vegetables
  • 300 ml cream
  • 1/4 cup fresh parsley
  • Red capsicum strips

Method
 

  1. Heat 1 tablespoon of oil
  2. Add chicken in batches,
  3. Cook, stirring, until chicken lightly browned
  4. Remove chicken from pan
  5. Heat another tablespoon of oil
  6. Add leek and garlic
  7. Cook, stirring until the leek is soft
  8. Stir curry powder, ginger, and lemon rind into the leek mixture
  9. Cook, stirring for 1 min
  10. Add frozen vegetables and cream, with chicken, to pan
  11. Simmer, uncovered, for 10 min (veges and chicken are tender and liquid has thickened slightly)
  12. Stir parsley in
  13. Garnish with red pepper
