Charcoal grilled chicken can be found from street vendors all over South-east Asia. I’d thought I’d try making some myself. 

Red Curry Paste

If you don’t have some commercial curry paste available then it is pretty simple to make it yourself … if you have the ingredients. This makes just two tablespoons of red curry paste. Perfect for Gaeng Panang Gai: Thai Chicken and Peanut Curry.

Panang curry is probably my favourite Thai curry. This recipe is with chicken but beef is good too. We tend to add vegetables to all our stove stop dishes – it isn’t authentic, but it is easy. Serve with steamed rice. 

Chicken Kapitan Curry

Malaysian restaurants are common in Australia and New Zealand and I got a bit of a taste for Kapitan Curry otherwise known as Chicken Kapitan Curry. Kapitan Curry is a Nonya / Straights Chinese dish. This is a dry curry lacks the gravy of the Malaysian Chicken Curry.
