Red Curry Paste

If you don’t have some commercial curry paste available then it is pretty simple to make it yourself … if you have the ingredients. This makes just two tablespoons of red curry paste. Perfect for Gaeng Panang Gai: Thai Chicken and Peanut Curry.

  1. 1-2 medium dried red chillies
  2. 1 black peppercorn
  3. 1/3 teaspoon ground coriander
  4. 1/3 teaspoon ground cumin
  5. pinch salt
  6. pinch ground cloves
  7. 1/3 bay leaf
  8. pinch nutmeg
  9. 1/10 onion, chopped
  10. 1/2 teaspoon garlic, crushed
  11. 1/2 tablespoon lemon juice
  12. 1/2 teaspoon oil
  13. 1 teaspoon coriander root, chopped
