- Heat 1 tablespoon of oil
- Add chicken in batches,
- Cook, stirring, until chicken lightly browned
- Remove chicken from pan
- Heat another tablespoon of oil
- Add leek and garlic
- Cook, stirring until the leek is soft
- Stir curry powder, ginger, and lemon rind into the leek mixture
- Cook, stirring for 1 min
- Add frozen vegetables and cream, with chicken, to pan
- Simmer, uncovered, for 10 min (veges and chicken are tender and liquid has thickened slightly)
- Stir parsley in
- Garnish with red pepper
