Pumpkin and Kumara Soup

This is a bit of a mash up on an Israeli and a couple of New Zealand Pumpkin soup recipes. Seems to work. 

Pumpkin and Kumara Soup

  1. 1 kg Pumpkin, peeled, chopped
  2. 1/2 kg Kumara (Sweet Potato), peeled, chopped
  3. 2 Medium Onions, peeled, quartered
  4. 2 cloves garlic, peeled
  5. 1 litre water
  6. 1 tablespoon chicken stock powder
  7. 1/2 - 1 teaspoon nutmeg
  8. 250 mls cream
  9. Salt and pepper
  10. Fresh Thyme leaves
  1. Add pumpkin, kumara, onions, garlic, stock powder and water to pot
  2. Boil until pumpkin and kumara is soft (~25 min)
  3. Remove and blend vegetables.
  4. Return vegetables to pot.
  5. Add nutmeg, cream, salt and pepper to pot
  6. Cook on medium heat for 7 minutes
  7. Season to taste
  8. Garnish with thyme
