“Hedgehog” Almond Cookies

Galit has been into baking recently and made these Almond Cookies. She nick named them “Hedgehogs” because of the spiky look. Beware, not the spines, but the taste … they are very more-isa.

"Hedgehog" Almond Cookies

A very tasty gluten free biscuit. good for those folk who like their nuts.

Ingredients
  

  • 500 grams sliced almonds
  • 3 large eggs whites only
  • 3/4 cup sugar
  • 2 teaspoons vanilla essence or 20 grams sugar vanilla

Instructions
 

  • Preheat oven to 170º C
  • Mix egg whites, sugar and vanilla
  • Add almonds and mix to unite
  • Put tablespoons of mixture on baking tray
  • Bake at 170º C for 15 minutes
  • Then reduce heat to 140º C and bake for another 15 minutes until golden
  • Remove from the oven and let cool
