My Weber Charcoal Kettle BBQ has seen a bit of action this summer. The other day I cooked up BBQ for friends and it went like clockwork, so I thought I’d type it up so I remembered the timings and what goes where. Galit particularly likes the roasted onions – very sweet when cooked in their skins.

The timings and what goes where help take some of the risk out of BBQ.

Ingredients
  

  • 4 large onions unpeeled
  • 500 grams baby potatoes unpeeled
  • 500 grams chicken fillets marinated
  • 4 beef burger patties about 2 cm thick

Instructions
 

  • Onions: Position for indirect method (IM).
  • Cover BBQ and cook for 10 minutes.
  • Onions: Leave on indirect method (IM).
  • Potatoes: Position for direct method (IM).
  • Cover BBQ and cook for 5 minutes.
  • Onions: Move to direct method (DM).
  • Potatoes: Move to indirect method (IM).
  • Chicken: Position for indirect method (IM).
  • Cover BBQ and cook for 8 minutes.
  • Onions: Position for indirect method (IM).
  • Potatoes: Leave on indirect method (IM)
  • Chicken: Turn over, brush with marinade, keep on indirect method (IM). .
  • Beef burgers: Position for direct method (DM)
  • Cover BBQ and cook for 6 minutes.
  • Beef burgers: Turn over, still on direct method (DM)
  • Cover BBQ and cook for 6 minutes.
  • Serve everything.

Notes

Serve with green salad, white baps, tomato sauce, mayonnaise, and anything else you fancy.
