Robert makes a fantastic apricot jam. He always gives me some to take home from our family holidays.

  1. 1.5 kg fresh apricots
  2. 1 kg sugar
  3. 1 lemon, juice only
  1. Remove stones from apricots to make about 1 kg of fruit
  2. Mix all ingredients
  3. Cook 1 to 1.5 hours. Remove froth as it forms. When water disappears it is ready.
  4. Pour into sterile jars
  5. Seal
