“Hedgehog” Almond Cookies

Galit has been into baking recently and made these Almond Cookies. She nick named them “Hedgehogs” because of the spiky look. Beware, not the spines, but the taste … they are very more-isa.

Mini Coconut Financiers / Minis Financiers À La Noix De Coco

Mini Coconut Financiers / Minis Financiers À La Noix De Coco
Galit wanted something Kosher for Passover and asked Karine Vigaelles for advice. Karine suggested “Minis Financiers À La Noix De Coco” off her site, but substituting almond powder for flour. A great success. Very moist and light; a delightful contrast to common fare at passover.

Galit’s Mushroom and Cheese Tarts

Galit's Mushroom and Cheese Tarts
Galit made her Mushroom and Cheese Tarts the other day. Kath Wattam, who was visiting, said “Galit’s mushroom pastries are *SO GOOD*. I don’t think I’ve ever tasted a better combination of mushrooms, pastry and eggs, and I’ve tried a lot of them.”

Moelleux au Chocolat / French Chocolate Cake

Moelleux au Chocolat / French Chocolate Cake
Karine Vigaelles introduced us to Moelleux au Chocolat, a French style chocolate cake. It is dense and delicious. We immediately asked for the recipe and Karine pointed us to the blog of a friend of hers, Isabelle Bonneau. The blog is called “La soupe à la citrouille”; isn’t it amazing how even “Pumpkin Soup” can ...

Onion Gravy for Bangers and Mash

Onion Gravy for Bangers and Mash
I’ve lived in the Uk for 16 years now and I quite like the British classic, Bangers and Mash. This is sausages and potato puree served with an onion gravy. Sausages and puree I could already do, but I needed a recipe for the gravy. This one combines a couple that I looked at on ...

Amhara Mesir Wat – Ethiopian Lentil Bowl

Amhara Mesir Wat - Ethiopian Lentil Bowl
Mark worked in Ethiopia and his wife Kath is vegetarian so one night, when Galit and I visited them, they cooked an Ethiopian feast for us featuring both meat and “fasting food” (i.e. vegetarian). The vegetarian main was Amhara Mesir Wat – we loved it so much we asked Kath for the recipe. Not only ...

Basic Bread

Basic Bread
I love bread and make bread quite a lot. This is my basic recipe if I want to eat bread the same day I start making it. Pizza bases are probably our most common variation. Focaccia is Galit’s favourite bread variation including chopped fresh basil in the dough and sea salt sprinkled over the top. ...

Kath’s Knækbrød

Kath's Knækbrød
Kath Wattam served this up for brunch when we visit her in Copenhagen last week. We had eaten a delightful meal with a variety of cheeses on Knækbrød when we asked “Where can we buy some of these crackers?” It was only then we realised that Kath had made them herself. Fantastic. Great taste and ...

French Glacé Cherries and Pistachios Financiers

French Glacé Cherries and Pistachios Financiers
Galit and I were introduced to these small French cakes by Karine Vigaelles. A financier is a small French cake. Financiers are light, moist and springy, with a crisp, eggshell-like exterior. They usually contains almond flour, crushed or ground almonds, or almond flavouring. The distinctive feature of the recipe is beurre noisette (brown butter). Financiers ...

Sticky Toffee Pudding

Sticky Toffee Pudding
For some reason I fancied Sticky Toffee Pudding on Xmas day. So I made some. It was both surprisingly easy and very good.
