These are great. Soft and resilient. The only tortilla recipe I’ve ever used where the tortillas hung together once stuffed full of goodies.

Tortillas - Mexican Pancakes

The only tortilla recipe I’ve ever used where the tortillas hung together once stuffed full of goodies.

Ingredients
  

  • 1/4 cup cornmeal fine
  • 1/2 cup cold water
  • 1/2 cup hot water
  • 1/2 teaspoon salt
  • 1 teaspoon olive oil
  • 1 cup plain flour

Method
 

  1. Make porridge with the cornmeal, water (hot and cold), and salt, i.e. mix and boil while stirring
  2. Add oil and flour
  3. Knead
  4. Cut into 8
  5. Roll out into rounds
  6. Cook on oiled griddle - real slow, to very slight tan
