Roman Chicken

For some reason we started going to a lot of Italian restaurants when we moved to the UK. I developed a liking for the Italian mains. This is my version of Roman chicken.

Ingredients
  1. 1/4 cup flour
  2. salt and pepper
  3. 9 chicken drum sticks, skin removed.
  4. Olive Oil
  5. 4 garlic cloves, diced
  6. 1 large red onion, sliced
  7. 4 large capsicums (any colour), sliced
  8. 1/2 cup olives (I used black)
  9. [Optional] capers
  10. 400 gram can of tomatoes
  11. 200 mls of chicken stock
  12. 1/2 teaspoon dried oregano
  13. 1/2 teaspoon dried thyme
  14. 1/2 teaspoon dried basil
  15. 1 bay leaf
  16. salt and pepper
Instructions
  1. Mix Flour, salt and pepper
  2. Coat each drum stick in flour.
  3. Fry the drum sticks in a pan until golden on all sides.
  4. Remove chicken from pan and set aside.
  5. Add garlic and onion to pan.
  6. Fry until softened.
  7. Add remaining ingredients to pan.
  8. Return chicken to pan.
  9. Cover.
  10. Bring to boil.
  11. Simmer for 20 minutes.
Notes
  1. Serve on rice.
