Potato and Corn Soup

Simple but tasty soup.

Potato and Corn Soup

Solid and quick.

Ingredients
  

  • 500 g potatoes diced
  • 1 onion chopped
  • 1.5 cups stock
  • 2 cans corn 800 ml total
  • 1 tablespoon flour or corn flour
  • 1/2 teaspoon thyme or nutmeg
  • 1/2 cup of milk

Method
 

  1. Mix potatoes, onion and stock.
  2. Bring to boil.
  3. Simmer until potatoes are cooked.
  4. Add corn, flour, herbs and milk.
  5. Bring back to boil.
  6. Remove from heat.
  7. Remove 3/4 of soup, blend and pour back with the rest.
