Portuguese Roast Lamb

Actually I don’t know whether this dish is Portuguese or Brazilian but Ines Rato who gave the recipe to me is Portuguese. Ines served this up at her place to a large group and it was yum. Aside from the potatoes mentioned below she served it with Brazilian lentils.

Portuguese Roast Lamb

Succulent lamb flavoured with paprika.

Ingredients
  

  • Leg of Lamb
  • 25 grams paprika colorau in Portuguese
  • 1 clove garlic
  • 1/3 cup white wine
  • salt and pepper
  • Olive oil
  • Onion chopped
  • Knobs of butter
  • Potatoes

Method
 

  1. Clean the fat (white) from the lamb
  2. Mix paprika, garlic, wine, salt and pepper
  3. Baste lamb with the spice mix
  4. Put oil and onion on top of the lamb
  5. Leave over night
  6. Dot the lamb with butter
  7. Heat oven to 180º C
  8. Cook lamb in oven for 2+ hours, turn after 1/2 hour
  9. Boil potatoes
  10. Add potatoes to the lamb sauce
