Hot ‘n’ Sour Fish

  1. Fish in bite size bits
  2. Soy sauce
  3. Salt
  4. 2 egg whites
  5. 2 teaspoons cornflour
  6. Fresh chillies
  7. Fresh ginger
  8. Fresh spring onions – cut long ways
  9. 1/2 cup of chicken stock
  10. 1/4 cup of vinegar
  11. dash of soy sauce
  12. 2 dessertspoons of sugar
  13. 2 more teaspoons of cornflour
  1. Marinate fish in soy sauce and sprinkle of salt (marinate for anything from 5 mins to overnight).
  2. Make batter with egg whites and 2 teaspoons of cornflour - mix together and beat until fluffy.
  3. Batter fish
  4. Cook bits of fish in shallow oil.
  5. Put aside.
  6. Pour out the excess oil, leaving a bit in pan for sauce mixture.
  7. Cook chillies, ginger, spring onions in pan fish was cooked in.
  8. Mix sauce ingredients - stock, vinegar, soy, sugar, and 2 teaspoons of cornflour.
  9. Add sauce mixture to chillies etc.
  10. Cook until thickens slightly.
  11. Add the fish back into the mixture and simmer for approximately 5 mins.
  12. Yum Yum Yum!!!
  1. Serve piping hot with rice!!
