By starting with cooked chicken this is an easy one to knock up. The mango salsa makes it sweet.
Chicken with Mango Salsa
Ingredients
- 1 cooked chicken
- 1 medium 350g mango chopped finely
- 1 small 80g red onion, chopped finely
- 1 medium 250g avocado, chopped finely
- 1 tablespoon olive oil
- 2 tablespoons lemon juice
- salt & pepper
Instructions
- Cut chicken into large pieces.
- Combine other ingredients in a medium bowl and mix gently
- Serve the chicken with the salsa, and salad if desired
