Chicken with Lemon and Coriander
Ingredients
- 2 tablespoons plain flour
- Freshly ground black pepper
- 1.2 kg chicken pieces
- 2 tablespoons olive oil
- 2 cups chicken stock
- 3 tablespoons lemon juice
- 3 tablespoons chopped fresh coriander
- 3 cloves garlic crushed
- 400 grams noodles and/or long pasta
- 2 tablespoons cream
Instructions
- Combine flour and black pepper
- Dust chicken pieces in the flour and pepper mix
- Shake off excess
- Heat oil in a pan
- Fry chicken pieces until golden all over.
- Reduce heat.
- Add stock, lemon juice, coriander and garlic to pan
- Simmer for 15-20 minutes until chicken is cooked
- Remove chicken from pan and keep warm
- While the chicken is cooking, cook the noodles as per instructions on packet
- Stir cream into chicken pan
- Boil quickly until slightly thickened
- Return the chicken to the pan and coat with the sauce
- Serve with noodles and salad
