Incredible. Serve chicken on noodles with a side salad. 

Chicken with Lemon and Coriander

Ingredients
  

  • 2 tablespoons plain flour
  • Freshly ground black pepper
  • 1.2 kg chicken pieces
  • 2 tablespoons olive oil
  • 2 cups chicken stock
  • 3 tablespoons lemon juice
  • 3 tablespoons chopped fresh coriander
  • 3 cloves garlic crushed
  • 400 grams noodles and/or long pasta
  • 2 tablespoons cream

Instructions
 

  • Combine flour and black pepper
  • Dust chicken pieces in the flour and pepper mix
  • Shake off excess
  • Heat oil in a pan
  • Fry chicken pieces until golden all over.
  • Reduce heat.
  • Add stock, lemon juice, coriander and garlic to pan
  • Simmer for 15-20 minutes until chicken is cooked
  • Remove chicken from pan and keep warm
  • While the chicken is cooking, cook the noodles as per instructions on packet
  • Stir cream into chicken pan
  • Boil quickly until slightly thickened
  • Return the chicken to the pan and coat with the sauce
  • Serve with noodles and salad
