Chicken with Lemon and Coriander

Ingredients
  

  • 2 tablespoons plain flour
  • Freshly ground black pepper
  • 1.2 kg chicken pieces
  • 2 tablespoons olive oil
  • 2 cups chicken stock
  • 3 tablespoons lemon juice
  • 3 tablespoons chopped fresh coriander
  • 3 cloves garlic crushed
  • 400 grams noodles and/or long pasta
  • 2 tablespoons cream

Method
 

  1. Combine flour and black pepper
  2. Dust chicken pieces in the flour and pepper mix
  3. Shake off excess
  4. Heat oil in a pan
  5. Fry chicken pieces until golden all over.
  6. Reduce heat.
  7. Add stock, lemon juice, coriander and garlic to pan
  8. Simmer for 15-20 minutes until chicken is cooked
  9. Remove chicken from pan and keep warm
  10. While the chicken is cooking, cook the noodles as per instructions on packet
  11. Stir cream into chicken pan
  12. Boil quickly until slightly thickened
  13. Return the chicken to the pan and coat with the sauce
  14. Serve with noodles and salad
