Chicken in Orange Sauce

Chicken wrapped around capsicum (pepper) then served in an orange sauce. Serve with rice or pasta.

  1. 4 chicken breast fillets
  2. Salt & pepper
  3. 1/2 red capsicum (red pepper), in thin strips
  4. Toothpicks
  5. 2 tablespoons olive oil
  6. 1/2 Cup Orange juice
  7. 1 tablespoon lemon juice
  8. 1/2 Cup white wine
  9. 1 tablespoon soy sauce
  10. 1 teaspoon sugar
  11. Salt & pepper
  12. 1 tablespoon cornflour
  13. Optional: Fresh parsley or coriander
  1. Beat chicken fillets until thin
  2. Season chicken
  3. Place strips of capsicum on each chicken fillet.
  4. Roll fillets around capsicum, and pin with toothpick.
  5. Heat oil in big non-stick pan.
  6. Cook chicken until browned on all sides.
  7. Add orange juice, lemon juice, wine, soy sauce, sugar, salt and pepper to pan with chicken.
  8. Cook (covered) on low heat for 15 minutes or until chicken cooked through.
  9. Remove chicken from pan and put on serving dishes (minus toothpicks).
  10. Thicken sauce in pan with cornflour (about 2 minutes).
  11. Pour sauce over chicken.
  12. Garnish
  1. Serve with rice or pasta.
