Chicken wrapped around capsicum (pepper) then served in an orange sauce. Serve with rice or pasta.
Chicken in Orange Sauce
Ingredients
- 4 chicken breast fillets
- Salt & pepper
- 1/2 red capsicum red pepper, in thin strips
- Toothpicks
- 2 tablespoons olive oil
- 1/2 Cup Orange juice
- 1 tablespoon lemon juice
- 1/2 Cup white wine
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- Salt & pepper
- 1 tablespoon cornflour
- Optional: Fresh parsley or coriander
Instructions
- Beat chicken fillets until thin
- Season chicken
- Place strips of capsicum on each chicken fillet.
- Roll fillets around capsicum, and pin with toothpick.
- Heat oil in big non-stick pan.
- Cook chicken until browned on all sides.
- Add orange juice, lemon juice, wine, soy sauce, sugar, salt and pepper to pan with chicken.
- Cook (covered) on low heat for 15 minutes or until chicken cooked through.
- Remove chicken from pan and put on serving dishes (minus toothpicks).
- Thicken sauce in pan with cornflour (about 2 minutes).
- Pour sauce over chicken.
- Garnish
