Carol’s Mulled Wine

One day a guy turned up for a dinner party at my place with 20 litres of homemade wine in a giant plastic container. The wine was quite good actually but once the container was opened the wine started going off. As it soured we starting using it for mulled wine – a task Bernard Laevens was in charge of. Bernard’s recipe was not recorded for prosperity so here is an alternative. I’ve now forgotten which Carol provided the.

Carol’s Mulled Wine

Ingredients
  

  • 1.2 litres claret
  • 2 oranges
  • 12 sugar cubes
  • 12 cloves
  • 1/2 teaspoon cinnamon
  • 600 ml boiling water
  • 1 sherry glass blue curacao
  • 1 sherry glass brandy
  • 2 nutmegs grated

Instructions
 

  • Pour claret into saucepan
  • Finely slice one unpeeled orange.
  • Thinly pare the rind of the other.
  • Add sliced orange and orange rind to claret
  • Add sugar and spices to claret.
  • Heat slowly to a comfortable drinking temperature.
  • Add boiling water when just off the boil.
  • Stir well.
  • Add curacao and brandy.
  • Pour into glasses
  • Sprinkle wine with nutmeg
