Bran Muffins

 Fiona and I went through a vegetarian phase and hung out at the only vegetarian cafe in my home town. They served the first muffins I’d ever seen. And in those days the only muffin was a bran muffin. This is Fiona’s version.

Bran Muffins

A classic from the days when the only muffins were bran muffins.

Ingredients
  

  • 1 1/2 cups flour
  • 2 cups bran
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 1/2 tablespoons sugar
  • Fruit and crap
  • 1 1/2 tablespoons golden syrup
  • 2 tablespoons butter
  • 3/4 cups milk
  • 3/4 cups water
  • 1 egg

Method
 

  1. Mix flour, bran, baking powder, baking soda, sugar and fruit
  2. Melt golden syrup and butter
  3. Add milk, water and egg to butter. Mix.
  4. Pour liquids over the dry ingredients
  5. Mix (at most 20 strokes)
  6. Bake at 180º C for 15-20 minutes
