Fiona and I went through a vegetarian phase and hung out at the only vegetarian cafe in my home town. They served the first muffins I’d ever seen. And in those days the only muffin was a bran muffin. This is Fiona’s version.
Bran Muffins
A classic from the days when the only muffins were bran muffins.
Ingredients
- 1 1/2 cups flour
- 2 cups bran
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 1/2 tablespoons sugar
- Fruit and crap
- 1 1/2 tablespoons golden syrup
- 2 tablespoons butter
- 3/4 cups milk
- 3/4 cups water
- 1 egg
Instructions
- Mix flour, bran, baking powder, baking soda, sugar and fruit
- Melt golden syrup and butter
- Add milk, water and egg to butter. Mix.
- Pour liquids over the dry ingredients
- Mix (at most 20 strokes)
- Bake at 180º C for 15-20 minutes
