BBQ Beer Can Chicken

I got my Weber Kettle BBQ from the Sunshine Garden Centre. And that is also where I got this recipe.

BBQ Beer Can Chicken

  • 1/2 cup finely chopped onions
  • 1/3 cup Dijon mustard
  • 1/3 cup soy sauce
  • 1/4 cup fresh lemon juice
  • 1 1/2 tablespoons minced garlic
  • 1 teaspoon chilli flakes
  • 1 teaspoon salt
  • 1 1/2 cups of beer
  • 1 whole small/medium chicken


  • In a small bowl, whisk together the marinade ingredients with 1 cup of beer
  • Remove and discard any excess fat from the chicken and rinse under cold water
  • Place the chicken in a large resealable container and pour in the marinade
  • Refrigerate for AT LEAST 3 hours, turning occasionally
  • Pour the remaining beer into the roaster cup
  • Remove chicken from the container and discard the marinade
  • Using the spike, insert into the base of the chicken and place over roaster cup
  • Place the infusion cap over the neck
  • Grill on the roaster until 180º C internal temperature (over direct medium heat for 40-50 minutes; using indirect method for 1 to 1 1/2 hours)
  • Halfway through grilling, spoon the excess marinade back over the chicken


Although originally "Beer Can Chicken" literally cooked the chicken on a beer can, this recipe assumes you have a chicken roaster accessory supplied by Weber.
