I got my Weber Kettle BBQ from the Sunshine Garden Centre. And that is also where I got this recipe.
BBQ Beer Can Chicken
Ingredients
- 1/2 cup finely chopped onions
- 1/3 cup Dijon mustard
- 1/3 cup soy sauce
- 1/4 cup fresh lemon juice
- 1 1/2 tablespoons minced garlic
- 1 teaspoon chilli flakes
- 1 teaspoon salt
- 1 1/2 cups of beer
- 1 whole small/medium chicken
Instructions
- In a small bowl, whisk together the marinade ingredients with 1 cup of beer
- Remove and discard any excess fat from the chicken and rinse under cold water
- Place the chicken in a large resealable container and pour in the marinade
- Refrigerate for AT LEAST 3 hours, turning occasionally
- Pour the remaining beer into the roaster cup
- Remove chicken from the container and discard the marinade
- Using the spike, insert into the base of the chicken and place over roaster cup
- Place the infusion cap over the neck
- Grill on the roaster until 180º C internal temperature (over direct medium heat for 40-50 minutes; using indirect method for 1 to 1 1/2 hours)
- Halfway through grilling, spoon the excess marinade back over the chicken
Notes
Although originally "Beer Can Chicken" literally cooked the chicken on a beer can, this recipe assumes you have a chicken roaster accessory supplied by Weber.
