10 minute Carrot Cake
Ingredients
Ingredients for Cake
- 2/3 cups oil
- 2 eggs
- 1 cup flour
- 3/4 cups sugar
- 1 1/2 teaspoons cinnamon
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon nutmeg
- 2 cups grated carrots
- 3/4 cups nuts
Ingredients for Cream cheese sauce
- 75 g cream cheese
- 75 g butter
- 1 teaspoon vanilla
- 1 cup sugar
Instructions
Instructions for Cake
- Beat oil and eggs
- Add and blend the flour, sugar, cinnamon, baking soda, baking powder and nutmeg
- Stir in the carrots and nuts
- Microwave medium/high for 10-12 minutes
- Cool 10-15 minutes.
Instructions for Cream cheese sauce
- Beat cream cheese, butter, and vanilla
- Add sugar and beat
- Slop over the cooled cake
