Easy and very fast. Dates from when I was keen on microwaves and baking treats quickly for my friends.

10 minute Carrot Cake

Ingredients
  

Ingredients for Cake
  • 2/3 cups oil
  • 2 eggs
  • 1 cup flour
  • 3/4 cups sugar
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon nutmeg
  • 2 cups grated carrots
  • 3/4 cups nuts
Ingredients for Cream cheese sauce
  • 75 g cream cheese
  • 75 g butter
  • 1 teaspoon vanilla
  • 1 cup sugar

Method
 

Instructions for Cake
  1. Beat oil and eggs
  2. Add and blend the flour, sugar, cinnamon, baking soda, baking powder and nutmeg
  3. Stir in the carrots and nuts
  4. Microwave medium/high for 10-12 minutes
  5. Cool 10-15 minutes.
Instructions for Cream cheese sauce
  1. Beat cream cheese, butter, and vanilla
  2. Add sugar and beat
  3. Slop over the cooled cake
