Apple and Pumpkin Soup

Apple and pumpkin soup. Sound interesting and Amanda Thomas-Griffiths recommended the recipe highly. I have to admit my attempt wasn’t flash.

  1. Half pumpkin
  2. One decent apple (granny smith is the best)
  3. One large carrot
  4. 2 cups chicken stock
  5. 1 teaspoon mixed spice
  6. 1 teaspoon nutmeg
  7. Freshly grounded pepper
  8. Knobs of butter - as required, depending on how fat you want to get!
  9. Cream/milk/water
  10. Parsley
    1. Chop the stuff required to be chopped and put in a saucepan (well there’s a thing!).
    2. Pour on the stock
    3. Mix in the spicy bits.
    4. Drop knobs of butter on top
    5. Simmer till quite tender.
    6. Blend
    7. Add cream if desired (milk does just as well) or thin with water (yuk).
    8. Sprinkle chopped parsley (also if desired)
    9. Et voila! Yum
