Sugar Snap Peas with Tomatoes and Oregano
Ingredients
- 600 grams sugar snap peas
- Oil
- 1 small red Spanish onion finely chopped
- 8 cherry tomatoes halved
- 1 teaspoon sugar
- 1 tablespoon balsamic vinegar
- 1 tablespoon water
- 1 tablespoon fresh oregano chopped
Instructions
- Steam sugar snap peas or microwave
- Place on plate
- Cook onion in oiled pan until soft
- Add tomatoes and sugar to pan
- Cook 2 minutes or until tomatoes are just soft
- Stir vinegar, water and oregano into pan
- Place on top of peas
