Sugar Snap Peas with Tomatoes and Oregano

Ingredients
  

  • 600 grams sugar snap peas
  • Oil
  • 1 small red Spanish onion finely chopped
  • 8 cherry tomatoes halved
  • 1 teaspoon sugar
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon water
  • 1 tablespoon fresh oregano chopped

Method
 

  1. Steam sugar snap peas or microwave
  2. Place on plate
  3. Cook onion in oiled pan until soft
  4. Add tomatoes and sugar to pan
  5. Cook 2 minutes or until tomatoes are just soft
  6. Stir vinegar, water and oregano into pan
  7. Place on top of peas
