Mushroom Ragu

Galit likes mushrooms and this one has them in spades. You can use any mixture of mushrooms that takes your fancy.

Mushroom Ragu

Ingredients
  

  • 2 tablespoons olive oil
  • 2 Garlic cloves
  • 15 Dried Porcini soaked for 10 min, squeezed, sliced
  • 10 Dried Shitake soaked for 10 min, squeezed, sliced
  • 10 Portobello sliced
  • 10 Champignon quartered
  • 3 tablespoons Madera wine
  • 1/2 teaspoon salt
  • 3-4 leaves fresh tarragon or basil or thyme

Method
 

  1. Add oil to frying pan and heat
  2. Fry garlic, remove from pan and reserve.
  3. Sauté each type of mushroom separately in the pan until brown, remove and reserve.
  4. Pour off oil.
  5. Turn up heat
  6. Pour wine into pan
  7. Reduce for 1 min.
  8. Add mushrooms
  9. Add salt and herbs to pan
  10. Serve
