Michal's Pot Roast (Tsli)

Slow cooked roast.

Ingredients
  

  • 2 kg more or less Beef Shoulder without bone cut 5-6 in Israel
  • Salt and Pepper
  • 1 + tablespoons mustard
  • Paprika enough / a lot
  • 4 garlic cloves crushed
  • [Optional] Onion chopped
  • ~6 cups boiling water or stock or wine

Method
 

  1. Tie meat
  2. Mix salt, pepper, mustard, paprika and garlic
  3. Cover meat
  4. Leave for at least 30 minutes
  5. Heat up oil in casserole dish until really hot
  6. Fry each side until brown like steak (~5-7 min per quarter)
  7. Add onion and fry a bit (~5 min)
  8. Add water a bit at a time until half the meat is covered
  9. Covered
  10. Cook for 2-3 hours on low heat
  11. If necessary remove froth from surface at the beginning of cooking
  12. Cool
  13. Remove excess fat from liquid
  14. Slice
  15. Return to oven to warm
  16. Serve on a small platter with juices
