Yum. This actually isn’t Mexican – it is just something that Marian whipped up one evening – but it seemed to have a Mexican flavour and the name stuck. Serve with rice.
Marian’s Marvellous Mexican Meat - well Chicken actually
Ingredients
- Onion
- Garlic
- Chicken bits
- Rosemary
- Oregano
- Cumin
- Pepper
- Salt optional
- Chicken stock
- Can tomatoes -chopped
Instructions
- Fry onion and garlic
- Add chicken and cook
- Add herbs, spices, salt and stock
- Simmer
- Add tomatoes
- Simmer
