I was doing some courses for a while where the caterer (Karen) made fab muffins. Muffins are really simple to make. Mix the dry ingredients. Mix the wet. Mix the two together (briefly). Cook. With only 1/2 cup of sugar these are not very sweet, so you might want to use more. Makes 12.
Karen's Muffins
Ingredients
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 - 3/4 cup sugar
- 1/2 cup Bran
- 1/2 teaspoon salt
- 1 cup Milk
- 1 teaspoon baking soda
- 1 Egg
- 100 g butter
- Choice of flavour - choose one of Banana & walnut Banana & Strawberry, Pineapple, Apple & Sultana
- & cinnamon Kiwifruit, Orange & Sultana
- 1 tablespoon sugar
- 1 teaspoon cinnamon
Instructions
- Mix flour, baking powder, sugar, bran and salt
- Mix milk and baking soda
- Beat egg
- Add to milk
- Pour into flour
- Melt butter
- Add choice of flavour to butter.
- Fold into mixture (mix as little as possible; maximum of 20 strokes)
- Put into muffin trays
- Mix 1 tablespoon sugar and cinnamon
- Sprinkle sugar and cinnamon over muffins
- Bake 220º C about 12 minutes.
