Karen’s Muffins

I was doing some courses for a while where the caterer (Karen) made fab muffins. Muffins are really simple to make. Mix the dry ingredients. Mix the wet. Mix the two together (briefly). Cook. With only 1/2 cup of sugar these are not very sweet, so you might want to use more. Makes 12.

Karen's Muffins

Ingredients
  

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 - 3/4 cup sugar
  • 1/2 cup Bran
  • 1/2 teaspoon salt
  • 1 cup Milk
  • 1 teaspoon baking soda
  • 1 Egg
  • 100 g butter
  • Choice of flavour - choose one of Banana & walnut Banana & Strawberry, Pineapple, Apple & Sultana
  • & cinnamon Kiwifruit, Orange & Sultana
  • 1 tablespoon sugar
  • 1 teaspoon cinnamon

Method
 

  1. Mix flour, baking powder, sugar, bran and salt
  2. Mix milk and baking soda
  3. Beat egg
  4. Add to milk
  5. Pour into flour
  6. Melt butter
  7. Add choice of flavour to butter.
  8. Fold into mixture (mix as little as possible; maximum of 20 strokes)
  9. Put into muffin trays
  10. Mix 1 tablespoon sugar and cinnamon
  11. Sprinkle sugar and cinnamon over muffins
  12. Bake 220º C about 12 minutes.
