Karen’s Muffins

I was doing some courses for a while where the caterer (Karen) made fab muffins. Muffins are really simple to make. Mix the dry ingredients. Mix the wet. Mix the two together (briefly). Cook. With only 1/2 cup of sugar these are not very sweet, so you might want to use more. Makes 12.

Ingredients
  

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 - 3/4 cup sugar
  • 1/2 cup Bran
  • 1/2 teaspoon salt
  • 1 cup Milk
  • 1 teaspoon baking soda
  • 1 Egg
  • 100 g butter
  • Choice of flavour - choose one of Banana & walnut Banana & Strawberry, Pineapple, Apple & Sultana
  • & cinnamon Kiwifruit, Orange & Sultana
  • 1 tablespoon sugar
  • 1 teaspoon cinnamon

Instructions
 

  • Mix flour, baking powder, sugar, bran and salt
  • Mix milk and baking soda
  • Beat egg
  • Add to milk
  • Pour into flour
  • Melt butter
  • Add choice of flavour to butter.
  • Fold into mixture (mix as little as possible; maximum of 20 strokes)
  • Put into muffin trays
  • Mix 1 tablespoon sugar and cinnamon
  • Sprinkle sugar and cinnamon over muffins
  • Bake 220º C about 12 minutes.
