Jane’s Apricot Special is chicken cooked in an apricot sauce. Yum. Sauce should be rich and fruity – watch you don’t dilute it too much.
"Jane's Apricot Special": Apricot Chicken
Ingredients
- 3 medium Onions
- 3 cloves Garlic
- 8 Chicken pieces
- olive oil
- 1 teaspoon Onion or chicken stock stock/soup powder
- [Optional] Water to dilute the stock
- 2 Cans apricots fruit from both plus syrup from one
- Cornflour mixed with a little water
Instructions
- Brown the onions, garlic, and chicken in the oil.
- Add the stock powder, water and apricots.
- Cover.
- Bake 180° C for 50 min.
- Thicken sauce by stirring in cornflour mixture.
