“Jane’s Apricot Special”: Apricot Chicken

Jane’s Apricot Special is chicken cooked in an apricot sauce. Yum. Sauce should be rich and fruity – watch you don’t dilute it too much.

"Jane's Apricot Special": Apricot Chicken

Ingredients
  

  • 3 medium Onions
  • 3 cloves Garlic
  • 8 Chicken pieces
  • olive oil
  • 1 teaspoon Onion or chicken stock stock/soup powder
  • [Optional] Water to dilute the stock
  • 2 Cans apricots fruit from both plus syrup from one
  • Cornflour mixed with a little water

Instructions
 

    1. Brown the onions, garlic, and chicken in the oil.
  • Add the stock powder, water and apricots.
  • Cover.
  • Bake 180° C for 50 min.
  • Thicken sauce by stirring in cornflour mixture.
