Cossack Chicken and Mushroom Pancakes

Very strangely I had this Cossack Chicken and Mushroom at the BBC canteen served with a parcel of mashed potato inside a crepe. The combination was entitled “Cossack Pancakes”. I liked it so much I rushed home to make it for Galit. Serves four

Cossack Chicken and Mushroom Pancakes

Ingredients for Cossack Chicken
  1. 4 tablespoon Butter
  2. 1 Large Onion, chopped .
  3. 200 grams Mushrooms, chopped
  4. 1 clove Garlic, minced
  5. 1/2 teaspoon Nutmeg ground fine
  6. 3 tablespoons Double or Whipping Cream
  7. 1/2 cup Sour Cream or Plain Yogurt or Crème Fraise
  8. 1 cup cheese, grated and/or crumbled (e.g. 50% yellow cheese and 50% Feta)
  9. salt & pepper
  10. 4 Chicken fillets (about 350 grams)
  11. 1 teaspoon paprika
Ingredients for Potato and Pancake Parcels
  1. 750 grams potatoes, peeled and chopped
  2. 4 pre-cooked crepes
Instructions for Cossack Chicken
  1. Preheat the oven to 200º C degrees
  2. Cook mushrooms, onion and garlic until mushrooms are slightly browned (10 min)
  3. Remove from heat
  4. Stir nutmeg, creams, cheese, salt and pepper into mushroom mix
  5. Reserve sauce
  6. Sprinkle the paprika over the chicken
  7. Fry or grill chicken until just golden
  8. Transfer to baking dish
  9. Pour over Mushroom mix from above
  10. Bake for 15 minutes.
  11. Serve immediately
Instructions for Potato and Pancake Parcels
  1. Boil potatoes (in salted water if you prefer) for 15-20 min until soft
  2. Mash potatoes with or without butter and milk as you prefer
  3. Put a big dollop of mashed potato on a crepe.
  4. Fold over all four sides to form a parcel
  5. Turn parcel over so edges are on the bottom
  6. Serve immediately
