Very strangely I had this Cossack Chicken and Mushroom at the BBC canteen served with a parcel of mashed potato inside a crepe. The combination was entitled “Cossack Pancakes”. I liked it so much I rushed home to make it for Galit. Serves four
Cossack Chicken and Mushroom Pancakes
Ingredients
Ingredients for Cossack Chicken
- 4 tablespoon Butter
- 1 Large Onion chopped .
- 200 grams Mushrooms chopped
- 1 clove Garlic minced
- 1/2 teaspoon Nutmeg ground fine
- 3 tablespoons Double or Whipping Cream
- 1/2 cup Sour Cream or Plain Yogurt or Crème Fraise
- 1 cup cheese grated and/or crumbled (e.g. 50% yellow cheese and 50% Feta)
- salt & pepper
- 4 Chicken fillets about 350 grams
- 1 teaspoon paprika
Ingredients for Potato and Pancake Parcels
- 750 grams potatoes peeled and chopped
- 4 pre-cooked crepes

Instructions for Cossack Chicken
- Preheat the oven to 200º C degrees
- Cook mushrooms, onion and garlic until mushrooms are slightly browned (10 min)
- Remove from heat
- Stir nutmeg, creams, cheese, salt and pepper into mushroom mix
- Reserve sauce
- Sprinkle the paprika over the chicken
- Fry or grill chicken until just golden
- Transfer to baking dish
- Pour over Mushroom mix from above
- Bake for 15 minutes.
- Serve immediately
Instructions for Potato and Pancake Parcels
- Boil potatoes (in salted water if you prefer) for 15-20 min until soft
- Mash potatoes with or without butter and milk as you prefer
- Put a big dollop of mashed potato on a crepe.
- Fold over all four sides to form a parcel
- Turn parcel over so edges are on the bottom
- Serve immediately
