Chocolate Brownies

One time Davina came to visit and mentioned her chocolate brownies. So after she got home I asked for the recipe. Davina, being American, shipped me two packets of ready made brownie mix. I’m not really a ready mix kind of guy so I made my own recipe.

Chocolate Brownies

  1. 200 grams dark or plain Chocolate (70% cocoa solids)
  2. 250 grams butter (or 125 grams Butter and cup oil)
  3. Optional 1/2 cup Strong Black Coffee or Expresso
  4. 1/2 - 1 teaspoon vanilla essence
  5. 4 eggs
  6. 1/2 teaspoon salt
  7. 1 - 1 1/2 cup sugar (depending on your sweet tooth)
  8. 1 cup flour
  9. 1/2 cup nuts (e.g. pecans), broken and possibly toasted
  10. [Optional] 3/4 teaspoon baking powder
  11. [Optional] 50 grams milk chocolate (chunks or bits)
  12. [Optional] 50 grams white chocolate (chunks or bits)
  13. 1/2 cup nuts, broken
  1. Pre-heat oven 170º C
  2. Melt, mix, and cool the chocolate, butter and coffee
  3. Add vanilla to chocolate mix
  4. Beat eggs, salt and sugar for 10 minutes
  5. Mix eggs with chocolate
  6. Add flour, nuts, baking powder and chocolate chunks (or bits) to mixture, stir until no lumps (aside from the chocolate)
  7. Pour into greased tray (30 cm by 30 cm, or 30 cm by 20 cm for a thicker version)
  8. Press nuts into top of brownies
  9. Bake for 35 minutes at 170º C
  10. Cut after the cake is cool (neither hot nor cold).
  1. Makes 16-20. There is an option to turn it into Triple Chocolate Brownies.
