Chicken with Spicy Rice and Yoghurt

Ingredients
  

Ingredients for chicken

  • 2 tablespoons oil
  • 3 teaspoons garlic
  • 1 teaspoon ginger
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon chilli
  • 1/3 teaspoon each cumin coriander, cardamom
  • Black pepper
  • Chicken pieces

Ingredients for rice

  • 1 tablespoon oil
  • 1/2-1 tablespoon black mustard seeds
  • salt
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon cumin
  • Rice
  • Mint leaves
  • Water 2 x amount of rice

Ingredients for yoghurt sauce

  • 1 cup yoghurt
  • 1 tablespoon mayo
  • 1 teaspoon mustard

Instructions
 

Instructions for chicken

  • mix oil, garlic, ginger, and spices
  • rub oil mixture into chicken
  • roast

Instructions for rice

  • Fry mustard seeds, salt, turmeric and cumin in oil until mustard seeds pop
  • add rice, mint and water to mustard and oil mixture
  • cook

Instructions for yoghurt sauce

  • mix all ingredients

Notes

You can vary proportions for the yoghurt sauce, eg a sweet sauce would have 1/2 cups yoghurt, 1/2 mayo, 1 tablespoon mustard
