Chicken with Spicy Rice and Yoghurt

Nice blend of flavours. And simple.

Ingredients
  

Ingredients for chicken
  • 2 tablespoons oil
  • 3 teaspoons garlic
  • 1 teaspoon ginger
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon chilli
  • 1/3 teaspoon each cumin coriander, cardamom
  • Black pepper
  • Chicken pieces
Ingredients for rice
  • 1 tablespoon oil
  • 1/2-1 tablespoon black mustard seeds
  • salt
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon cumin
  • Rice
  • Mint leaves
  • Water 2 x amount of rice
Ingredients for yoghurt sauce
  • 1 cup yoghurt
  • 1 tablespoon mayo
  • 1 teaspoon mustard

Method
 

Instructions for chicken
  1. mix oil, garlic, ginger, and spices
  2. rub oil mixture into chicken
  3. roast
Instructions for rice
  1. Fry mustard seeds, salt, turmeric and cumin in oil until mustard seeds pop
  2. add rice, mint and water to mustard and oil mixture
  3. cook
Instructions for yoghurt sauce
  1. mix all ingredients

Notes

You can vary proportions for the yoghurt sauce, eg a sweet sauce would have 1/2 cups yoghurt, 1/2 mayo, 1 tablespoon mustard
