Chicken in Soy Sauce and Sherry

Serve with salad and baked potatoes topped with creamy mushroom sauce.
 

Chicken in Soy Sauce and Sherry

Ingredients
  

  • 1 kg chicken pieces
  • Oil
  • 1 large onion coarsely grated
  • 3 garlic cloves crushed
  • 1 knob root ginger peeled and grated
  • 2 tablespoons oil
  • 3 tablespoons soy sauce
  • 3 tablespoons sweet sherry
  • 1 teaspoon curry powder

Method
 

    1. Cut chicken breasts in half, if large.
  1. Remove excess fat from thighs.
  2. Brown both sides of chicken in oil
  3. Transfer to baking dish in single layer close together and skin side down.
  4. Sprinkle onion, garlic and ginger over chicken
  5. Mix oil, soy sauce, sherry and curry powder
  6. Pour over chicken
  7. Bake at 180 for 45 minutes,
  8. Turn chicken
  9. Bake at 170 for another 30 minutes, until browned and tender
  10. Serve with juices spooned over each serving.
