Tasty chicken and vegetable pie that Marian served up a few times. Yum.
Chicken Henny Penny Pie
Ingredients
- Water
- 300 g chicken bits
- 1 sliced onion
- 4 big bits of parsley
- Bay leaf
- 1 carrot sliced
- 30 g butter
- 400 g spinach chopped
- 2 leeks chopped
- 250 g cottage cheese
- Couple handfuls grated tasty cheese
- Pastry
Instructions
- Poach chicken, onion, parsley, bay and carrot until everything cooked and softish
- Strain, retain liquid for stock
- Store chicken stuff
- Melt butter
- Add spinach and leeks
- Cook on low heat until moisture evaporated
- Combine cheeses with chicken stuff and spinach stuff
- Roll out pastry
- Layer half pastry over a pie dish
- Bung filling in middle of pie
- Layer other half of pastry over top and trim.
- Cook at medium heat until done
