- Poach chicken, onion, parsley, bay and carrot until everything cooked and softish
- Strain, retain liquid for stock
- Store chicken stuff
- Melt butter
- Add spinach and leeks
- Cook on low heat until moisture evaporated
- Combine cheeses with chicken stuff and spinach stuff
- Roll out pastry
- Layer half pastry over a pie dish
- Bung filling in middle of pie
- Layer other half of pastry over top and trim.
- Cook at medium heat until done
