Baharat is an Arab spice mix. It comes in different combinations depending on the country. You can choose any combination you like but it should mostly contain:
- fresh ground black pepper
- paprika
- ground cumin
- ground coriander
- ground cloves
The ingredients above should form the bulk of the mixture however Baharat should also contain a little bit of:
- nutmeg
- ground cinnamon
- ground cardamom
There are many different recipes for Baharat spice mixture. This is the one I settled on. It makes two tablespoons – which is enough for most recipes without leaving any spare.
Baharat Spice Mixture
Ingredients
- 1 teaspoon ground black pepper
- 1/2 teaspoon ground paprika
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon allspice
- 1 teaspoon ground ginger cumin, and/or coriander
- Optional 1/2 teaspoon ground cinnamon (Galit doesn't like cinnamon in this dish which is why I added the allspice to the mixture)
- Optional Pinch of ground cardamom
