Toasted Muesli

I started to make my own muesli over 20 years ago because I didn’t like the amount of sugar the commercial muesli’s added. And while I was about it I cut back on the amount of fat as well. Originally I micro-waved this recipe – this had the advantages that it was fast (8 minutes cooking) and I could cook the muesli in the same container I would store it in. More recently I bake it in an oven as I just don’t trust the microwave anymore.

Toasted Muesli

Tasty muesli with no sugar and no oil.

Ingredients
  

  • 1 tablespoon butter
  • 3 tablespoons honey or golden syrup
  • 4 cups rolled oats
  • 1 cup wheat germ
  • 1 cup coconut
  • [Optional] 1/2 cup malt
  • 1 1/2 cups nuts and seeds Pecans, almonds, hazelnuts, peanuts, pumpkin seeds, sesame seeds
  • 1 cup crunchy bran flakes San Bran or similar
  • 1 cup dried fruit Apricots, Raisons, Sultanas, Dates, Pineapple, Papaya
  • 1 hand full of dried Banana chips

Method
 

  1. Melt butter and honey (or golden syrup) in a large oven tray
  2. Add rolled oats, wheat germ and coconut
  3. Stir
  4. Bake 180º C for 11 minutes (or Microwave 2 minutes on high)
  5. Remove from oven
  6. [Optional Step] Add malt to mixture
  7. Stir
  8. Bake 180º C for 11 minutes (or Microwave 2 minutes on high)
  9. Remove from oven
  10. Add nuts and seeds
  11. Stir
  12. Bake 180º C for 11 minutes (or Microwave 2 minutes on high)
  13. Remove from oven
  14. Add bran flakes, dried fruit and banana chips
  15. Stir
  16. Bake 180º C for 11 minutes (or Microwave 2 minutes on high)
  17. Remove from oven
  18. Continue to stir until cool.
  19. Don’t put the lid on for 2 hours.
