Pumpkin soup is very common in New Zealand.
Pumpkin Soup
Ingredients
- 1 Pumpkin peeled, cubed
- 1 1/2 cups water from pumpkin
- 1 1/2 cups milk
- 1 cup cheese
- 1 teaspoon nutmeg
- 2 onions
- Garlic
- Salt and pepper
Instructions
- Boil pumpkin for 20 min. Drain.Mash.
- Mix cooking water, milk, cheese and nutmeg in bowl.
- Add pumpkin to bowl.
- Sauté onions and garlic.
- Add pumpkin mixture to onions.
- Blend to smooth mixture
- Season with salt and pepper
