Carrot and Mushroom Loaf

Good, but once again, mine is too sloppy. Team with mashed potatoes, broccoli and baked tomatoes.

Carrot and Mushroom Loaf

Ingredients
  

  • 1 Onion
  • 2 cloves garlic
  • 200 g mushrooms
  • 3 cups carrot grated
  • 1/2 cup bread crumbs dry
  • 1/2 cup cheese grated
  • 1 teaspoon basil
  • 1/4 teaspoons thyme
  • black pepper
  • 1/2 cup milk
  • 2 eggs
  • 2 teaspoons bread crumbs
  • 2 teaspoons cheese grated
  • Paprika.

Method
 

  1. Cook onions and garlic.
  2. Add mushrooms and cook.
  3. Add carrot, bread crumbs, cheese, basil, thyme, pepper, milk and eggs.
  4. Mix.
  5. Pour into greased loaf tin.
  6. Mix together 2 teaspoons of bread crumbs and 2 teaspoons of cheese.
  7. Sprinkle cheesy breadcrumbs over loaf.
  8. Dust loaf with paprika.
  9. Cover with foil.
  10. Bake at 180 C for 30 min
  11. Uncover.
  12. Bake for another 20-30 min.
