Carrot and Mushroom Loaf

Good, but once again, mine is too sloppy. Team with mashed potatoes, broccoli and baked tomatoes.

Carrot and Mushroom Loaf

Ingredients
  

  • 1 Onion
  • 2 cloves garlic
  • 200 g mushrooms
  • 3 cups carrot grated
  • 1/2 cup bread crumbs dry
  • 1/2 cup cheese grated
  • 1 teaspoon basil
  • 1/4 teaspoons thyme
  • black pepper
  • 1/2 cup milk
  • 2 eggs
  • 2 teaspoons bread crumbs
  • 2 teaspoons cheese grated
  • Paprika.

Instructions
 

  • Cook onions and garlic.
  • Add mushrooms and cook.
  • Add carrot, bread crumbs, cheese, basil, thyme, pepper, milk and eggs.
  • Mix.
  • Pour into greased loaf tin.
  • Mix together 2 teaspoons of bread crumbs and 2 teaspoons of cheese.
  • Sprinkle cheesy breadcrumbs over loaf.
  • Dust loaf with paprika.
  • Cover with foil.
  • Bake at 180 C for 30 min
  • Uncover.
  • Bake for another 20-30 min.
