Chicken in Orange Sauce

Ingredients
4
chicken breast fillets
Salt & pepper

red capsicum
red pepper, in thin strips
Toothpicks

olive oil

Cup
Orange juice
1
tablespoon
lemon juice
1/2
Cup
white wine
1
tablespoon
soy sauce
1
teaspoon
sugar
Salt & pepper
1
tablespoon
cornflour
Optional: Fresh parsley or coriander
Instructions
Beat chicken fillets until thin
Season chicken
Place strips of capsicum on each chicken fillet.
Roll fillets around capsicum, and pin with toothpick.
Heat oil in big non-stick pan.
Cook chicken until browned on all sides.
Add orange juice, lemon juice, wine, soy sauce, sugar, salt and pepper to pan with chicken.
Cook (covered) on low heat for 15 minutes or until chicken cooked through.
Remove chicken from pan and put on serving dishes (minus toothpicks).
Thicken sauce in pan with cornflour (about 2 minutes).
Pour sauce over chicken.

Serve with rice or pasta.
