A classic from my days as a vegetarian. And a useful way to use up courgettes if you happen to have a plant growing – each plant produces masses of product.
- 3 eggs beaten
- 5 Courgettes grated and drained
- 1 onion
- 1 cup cheese
- 1 cup self raising flour
- bit of oil
- Salt and pepper
- Mushrooms or corn
- Mix all ingredients.
- Bake for 30-40 min on moderate.
Be careful to drain the courgettes (zucchini) to avoid the slice being too sloppy.
