Robert makes a fantastic apricot jam. He always gives me some to take home from our family holidays.

Apricot Jam / Riba Mishmish

  • 1.5 kg fresh apricots
  • 1 kg sugar
  • 1 lemon juice only


  • Remove stones from apricots to make about 1 kg of fruit
  • Mix all ingredients
  • Cook 1 to 1.5 hours. Remove froth as it forms. When water disappears it is ready.
  • Pour into sterile jars
  • Seal
