In a small bowl, whisk together the marinade ingredients with 1 cup of beer
Remove and discard any excess fat from the chicken and rinse under cold water
Place the chicken in a large resealable container and pour in the marinade
Refrigerate for AT LEAST 3 hours, turning occasionally
Pour the remaining beer into the roaster cup
Remove chicken from the container and discard the marinade
Using the spike, insert into the base of the chicken and place over roaster cup
Place the infusion cap over the neck
Grill on the roaster until 180ยบ C internal temperature (over direct medium heat for 40-50 minutes; using indirect method for 1 to 1 1/2 hours)
Halfway through grilling, spoon the excess marinade back over the chicken

Although originally "Beer Can Chicken" literally cooked the chicken on a beer can, this recipe assumes you have a chicken roaster accessory supplied by Weber.
