10 minute Carrot Cake

Ingredients for Cake

  • 2/3 cups oil
  • 2 eggs
  • 1 cup flour
  • 3/4 cups sugar
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon nutmeg
  • 2 cups grated carrots
  • 3/4 cups nuts

Ingredients for Cream cheese sauce

  • 75 g cream cheese
  • 75 g butter
  • 1 teaspoon vanilla
  • 1 cup sugar

Instructions for Cake

  • Beat oil and eggs
  • Add and blend the flour, sugar, cinnamon, baking soda, baking powder and nutmeg
  • Stir in the carrots and nuts
  • Microwave medium/high for 10-12 minutes
  • Cool 10-15 minutes.

Instructions for Cream cheese sauce

  • Beat cream cheese, butter, and vanilla
  • Add sugar and beat
  • Slop over the cooled cake
