Heat 1 tablespoon of oil
Add chicken in batches,
Cook, stirring, until chicken lightly browned
Remove chicken from pan
Heat another tablespoon of oil
Add leek and garlic
Cook, stirring until the leek is soft
Stir curry powder, ginger, and lemon rind into the leek mixture
Cook, stirring for 1 min
Add frozen vegetables and cream, with chicken, to pan
Simmer, uncovered, for 10 min (veges and chicken are tender and liquid has thickened slightly)
Stir parsley in
Garnish with red pepper
